been driving through deep deep red areas in OR , ID & UT and just can't help but notice all the big government socialism in the form of large scale irrigation projects.

That isn't socialism. A capitalist government having significant involvement in an industry that benefits the public isn't what socialism is. The motivations are still rooted in and influenced by the accumulation of profits, and capitalists would likely still have major influence over it all.

Well the very ranchers and farmers that are benefiting from it would absolutely call any large scale government project that benefited others a socialism and big government. They fancy themselves as self made rugged individualists.

They would call it socialism likely because they don't know what socialism is outside of the anti-socialism propaganda they've been induced with since adolescence, meaning, to them, "socialism = government doing a lot of stuff."
